A special Easter cake

Easter is just around the corner! And to get you in the mood right away, we're sharing a sweet treat to prepare in advance: a moist cake with duck eggs, perfect for delighting both kids and adults.

Ingredients

  • 190 g of mild olive oil

At Ilanga Nature

  • 1 teaspoon of vanilla extract. 

At the market

  • 4 duck eggs (about 240 g)
  • 240 g of sugar
  • 240 g of self-raising flour
  • 2 spoonfuls of milk (optional)
  • Jam (optional)

Preparation

  1. Preheat the oven to 180°C. Butter and line two round molds.
  2. Weigh the eggs, then weigh the same weight in sugar, butter, and flour.
  3. Whip the butter and sugar. Add the eggs one by one, then the vanilla.
  4. Incorporate the flour. Add a little milk if the dough is thick.
  5. Distribute into molds. Bake 25-30 min.
  6. Let cool, glaze with jam and assemble.
